Because Genesis literalists believe that we were created in a day, or a thousand years along with other land animals, depending on who is interpreting the story...that just simply doesnt mesh with evolution...evolution takes millions of years to occur....and humans have only existed on this planet for a relatively short period...the fossil record also contradicts this account
dinosaurs were on the Earth, millions of years before humans
the two accounts are completely incompatible

Because:
1) Some people can't accept that humans are animals or that we share a common descent with primates
2) Some people are fixed on the idea that we are made in God's image, if we gradually developed from a primate-like being then that sense of elite-ness is gone
3) Some people just can't accept that the Bible is not 100% accurate in every way, despite not reading it for themselves AND spotting the contradictions.

Literal Biblical Creation is not compatible with modern science. Other doctrines of Creationism may not be incompatible with science. Evolution says nothing of the existence or non-existence of God.

Evolution proposes that we are the descendants of ape creatures like the Chimpanzee which we share over 98% of our DNA or genetic code. Creation poposes that we are all the descendants of Adam and Eve. Eve was formed out of Adams rib(a clone) Which makes no sense. Slightly different views.

Evolution is a scientific theory, like gravity, with evidence and testing and predictions that can be verified. Creationism is exclusively religious and demands a complete denial of all available evidence.
The real world is not like "A Miracle on 34th Street", where belief can affect reality.

Creation -- is the creation of life, Evolution is the continuity of that Creation, so the pattern ,is Creation - cause to exist. Evolution - undergo changes gradually,a pattern of growth. They counter balance each other .Evolution changes Creation.
