I don't have any recipes for you, just principles and maybe a new angle to look into.
Have you considered the low-carb diets? Not the really strict insane ones. The reason I mention it is because there are huge links between insulin resistance/pre-diabetes AND carbs.
As you know, all carbs break down into some form of sugar, so heavily monitoring your carbs would help with your diabetes whether you are Type 1 or 2...or just trying to prevent it with a diabetes friendly diet.
Having said that, you shouldn't go whole hog with any diet that asks you to give up a whole food group, and you shouldn't go crazy on high fats and all protein just because it is allowed. Protein in particular is linked to kidney problems, and that is a long-term problem with lots of people with diabetes. So you should watch everything you eat and practice moderation.
I never use recipes, but I can offer you a few tips about cooking.
Start by eliminating EVERYTHING from your house that is overprocessed, especially if it contains excessive amounts of sugar. Donate it to someone, toss it, flush it. Whatever you do with it.
Replace with whole grains, fresh foods, explore different fruits if you want sweets. You can make your own convenience food in large batches and freeze it if you want a shortcut. Also bulk up on your spice cabinet and learn to get used to new flavors.
A good place to look, this is referral from my friends from other towns...is a store called Whole Foods. They have bulk sizes of healthy stuff and they claim to be committed to staying in the low price ranges.
Once you have your pantry stocked with the right ingredients for your needs, your imagination is your only limit...well, that and portion control.

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. For me, the worst part of this horrible disease is the severe pain I constantly get in my feet. The pain is so bad that I avoid standing and walking as much as possible. This is a good one to carry around with you because it contains slow release carbs (oats). It does have a lot of cheese, but you generally will not need much if it is just for a snack.
1 medium onion, finely diced
1 large egg beaten
1 - 2 carrots, grated
2 oz butter or margarine, melted
4 oz rolled porrige oats
8 oz hard cheese of your choice, such as cheddar - medium strength.
Rosemary, or dried mixed herbs
Caraway seeds (optional)
Olive oil if mixture too dry.
Salt and pepper to taste, but be careful of the salt, cheese is salty
Pre-heat oven to 180 c, 350 f, Gas Mark 4
Mix all the ingredients together well. It should be a sticky mass. Add the olive oil if it is too dry a few drops at a time. Then press into a well greased, small roasting tray. Bake in the oven for about 40 minutes (cover if it gets too brown, too quickly)
Leave the oven door open and allow to cool. Turn the slice out onto a cooling rack to firm up the bottom and then when cold, with scissors, cut up into the sized slices you require. Keep cool in an airtight container.
Everyone who likes cheese will like this one. I defy you to keep it more than a couple of days - my mother is always "trying" it for quality, when I make it!

I know that this is a snack, but sometimes you need something easy to carry to snack on.

This is delicious -- and easy. This comes from the American Diabetic Society and Weight Watchers also endorses this. Diet or not, it is delicious. 1 box Betty Crocker Angel Food cake mix 1 20 oz can of crushed pineapple with juice. Mix all together--really. Pour in a tube pan or a 9x13 and Bake 350 for abt 25 mins. Serve with low fat whipped topping.

. It asserts that you could reverse the source of diabetes in as short as 3 weeks. Even though I'm not a physicians or a scientist I don't think that diabetes can be reversed... unfortunately it's chronic disease as far as I know. That said I found this book very interesting and it gave me a different perspective on diabetes, causes and cures. I think it's worth buying it.
