There must be a thousand things you could talk to her about, find interesting, compliment, or otherwise how could you think you like her? Talk about the weather, talk about the class you have together, ask her what she thought about tomorrow's assignment, how does she like the class or teacher, ask her if she would like to go with you to lunch.
Truth is that it doesn't matter what you say to her or how smooth or clumsily you say it, because if she wants to meet you she doesn't care what you say (long as it is not rude -and don't call her chick). The fact that you were bold enough to come and speak to her tells her you are interested.
Since you are both still in school, I am assuming you both are very young, maybe teens. I think the kids who are too shy to approach someone of the opposite sex still tell one of the girl's girlfriends of your interest and ask her what her friend thinks of you. Silly, but if it works it's not so silly anymore, is it?

If it's a "chick in your class" I assume you are youngish. I think any of the options you gave are great.
I think asking "what's up" is pretty good because she needs to answer with more than "thanks". Might be better if you could ask for help on something you are studying (even if you don't need the help). Make sure there isn't anybody else around so they don't answer it for her. This gives you more get acquainted time.

you should know on what seat is always used to sit on in the class and then the next morning you should go into class very early and take her favorite seat.
Then she will approach you and tell you that it's her seat and then just apologize and give her her seat back - just tell her that you did not know that she is the one sitting there... then start a nice conversation or offer her a drink after class just to compensate with the situation.
