You have to wait until they turn yellow then cut them up and and add to a nice glass of homeade lemonade.

Assuming that you did not confuse them with lime, green lemons are just lemons not ripened yet. However, they get juicy once they are fully grown and just before they start turning yellow. I like those more than yellow ones. The smell and taste is tangier. A few drops of green lemon juice will do the same job as half a yellow lemon. Also whenever your recipe calls for grated lemon peel, try to use green ones if you can find them. Your cake (or whatever) will smell and taste better.

Grate Green Lemons for Strong Flavor:
In recipes that call for grated lemon peel where the lemon smell and taste need to stand out, use under-ripe (green) lemons. Both the smell and taste are stronger than ripe (yellow) lemons.

green lemons just didn't get the chance to rippen on the tree, they won't be as sweet as yellow ones, however lemons out here(if you are in Canada anyway) aren't as sweet as the ones in Italy that actually get to fully ripen on the tree. In other words use them wherever you use the regular ones!

You can use green lemons for fish, tacos, lettuce (add salt), and my personal favorite, cucumbers (add salt as well with the green lemons)

Do you mean for what sort of recipe, or how you can get the juice out of them? If they are a bit hard and you are having trouble squeezing the juice out of them, put them in the microwave for 10 seconds or so and they will be much easier to squeeze. Put them in for a bit longer if it doesn't work at first.
