it absorbs the moisture, which causes the brown sugar to clump and get hard.. also, you can try keeping it in the fridge, that seems to work the best

The bread adds moisture to the container without "melting" the brown sugar. You can also get the same result with an apple wedge or a damp paper towel that has been placed in an open zip lock sandwich bag. Some stores sell a baked softener made of clay that is soaked in water and then put in the brown sugar container. The moisture or water content in the added item is what makes the brown sugar soft no matter which one you choose to use. I just keep mine in a jar that screws shut - white sugar, flour and other foods as well. (good way to recycle those jars!)

If youre talking about bread kept in a container together with brown sugar, the bread absorbs the humidity in the container so the sugar wont stick together,hence making it soft.Its not something thats inside the bread.

There is nothing "in" the bread. What happens is that the bread absorbs the excess moisture from the brown sugar.
