Sugar Cookies
These are cake like soft sugar cookies that are still firm enough to ice or frost. You can control the firmness of cookies by baking two at once, one at the shortest time, pull it out and let the other go to the longest time, let them cool and see the difference, then pick which time you need for the rest of the batch.

Ingredients
1/2 c.Shortening
1 c.Sugar
1Egg
2 1/2 c.Flour
2 tspCream of tartar
1 tspSoda
1 tspVanilla
1/2 c.Milk
1 tspNutmeg
Preparation
Preheat oven to 350 degrees. Mix ingredients and roll out dough. Cut into your favorite holiday shapes and bake for about 10-15 minutes.

cup (1/2 lb.) softened butter or margarine
1/2 cup sugar
1 egg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon ground cardamom
3 cups all-purpose flour

Preheat oven to 350°F.

Beat the butter (margarine) until creamy. Beat in the sugar until well blended.

Stir in the egg, then the salt, cardamom, vanilla extract, and almond extract.

Slowly add the flour, blending well.

Refrigerate the dough for 30-90 minutes. Take out only enough to work with at one time.

Roll to 1/8" thickness on a lightly floured board. (Flour the rolling pin lightly, too, or use a rolling pin cover.) Cut the dough with floured cutters.

Place cookies on ungreased baking sheets (optional: use parchment paper). Leave a little room between cookies. Bake at 350°F for 11-15 minutes until lightly browned at edges. Remove cookies from baking sheets after 1-2 minutes and let them cool.

These cookies may be frozen. You can refrigerate the dough or even freeze it for later use

INGREDIENTS
1 cup butter, softened
2 1/4 cups white sugar
2 eggs
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons ground cardamom
1/2 cup milk
DIRECTIONS
In a large mixing bowl, cream together butter and 2 cups of the sugar. Add eggs one at a time and beat well after each. Combine flour, baking soda, baking powder and 1 teaspoon of the cardamom. Add flour mixture to the creamed butter mixture alternately with the milk.
In a small separate bowl, blend remaining sugar and cardamom. Dip rounded teaspoonfuls of dough into sugar/cardamom mixture.
Place on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 10-12 minutes or until lightly browned. Cool on wire racks
