dice 2 tomatoes,1 chili serrano 1/4 cup diced onion chopped cilantro as desired salt to taste i also add diced avocado. if you want more hottness add more chili i eat this with carne asada in corn tortillas.

Do I!! I love this herb-infused salsa...it is easy and so tasty! It is good with fish, chicken, or just tortilla chips!!!
1 (28 ounce) can diced tomatoes
1 green bell pepper, diced
1/4 cup minced red onion
1/4 cup minced fresh cilantro
1 tablespoon adobo sauce from canned chipotle peppers
1 tablespoon chopped fresh tarragon
1/2 teaspoon salt
2 tablespoons balsamic vinegar
In a bowl, toss together the tomatoes, bell pepper, onion, cilantro, adobo sauce, tarragon, and vinegar. Season to taste with salt, cover, and refrigerate at least 30 minutes.
This is an easier version...
4 medium tomatoes, diced (use 6-8 Roma tomatoes instead, if available)
4 scallions, diced, green and white parts both 1 clove garlic, diced
2 jalapeno peppers, seeded and chopped
2 teaspoons freshly squeezed lime juice
1 tablespoon fresh, sharp oregano, chopped
Salt to taste
Combine all of the ingredients, mixing briefly. Chill for at least 2 hours before serving with chips.

1 jalapeno pepper, seeded and finely chopped
1 tablespoon olive or vegetable oil

1/2 cup rice wine vinegar

DIRECTIONS
In a large bowl, stir together corn, beans, onion, red pepper, and sugar. Stir in rice wine vinegar, and season with salt.

PREPARATION:
Combine stewed tomatoes in saucepan with onions, fresh tomato, salt and pepper. Bring just to a boil. Boil hard for about 1 minute . Remove from heat.
Blend half of the mixture until finely chopped.
Return to remaining half of mixture.
Cool and refrigerate in a tightly covered container to use with a week to 10 days. This salsa can be frozen. If hotter salsa is desired, add chopped canned green chiles or jalapeno peppers.

1 teaspooon lime juice (lemon juice ok)
1/2 bunch of cilantro chopped fine

INGREDIENTS
* 2-1/2 pounds Roma tomatoes
* 1-1/2 green bell peppers, diced
* 4 stalks celery, chopped
* 4 jalapeno peppers, seeded and minced
* 1 tablespoon white sugar
* 2 cloves garlic, minced
* 2 (4 ounce) cans diced green chiles
* 1 tablespoon and 1-1/2 teaspoons salt
* 1 tablespoon dried oregano
* 1-1/2 teaspoons ground black pepper
* 1-1/2 onions, chopped
* 1 tablespoon and 1-1/2 teaspoons chopped fresh cilantro
DIRECTIONS
1. In a six-quart pot of boiling water, blanch tomatoes, drain and cool under cold water. Peel and coarsely chop. Return chopped tomatoes to pot, bring to boil and reduce heat. Skim juice from top of tomatoes and reserve, if you'd like, for another use. Do not overcook and allow tomatoes to remain chunky.
2. In two quarts of boiling salted water, add chopped bell peppers, celery, jalapenos, garlic, green chilies and cook until all ingredients are tender. Drain and add vegetables to tomatoes.
3. Add salt, oregano, black pepper and cilantro. Simmer gently for 15 minutes.
4. Hot pack the salsa in clean pint jars. Follow manufactures suggestions on preparing the lids and jars for proper sealing.

Chop the following vegetables:
Roma tomatoes (they have the best flavor)
Onions (red are strong, Vidalia are sweet, white are mild)
Jalapeno peppers (if you don't want it hot) OR
Habanero peppers (if you want it hot)
Add fresh cilantro
Salt, to pull the flavors out
Mix it up very well.

Making salsa is a hassle. Go to the store and purchase some PACE salsa. It is very, very good and tastes just like homemade. It comes in different "heats", mild, medium, hot.
