I have tried a few (courtesy of my grandmother), but this book had some really cool ideas/recipes:
Kosher Creole Cookbook, by Mildred L. Covert
also try this book:
Kosher by Design, by Susie Fishbein

I absolutely LOVE potato latkes!! With sour cream and salt. Yum!
