The most notable cannibalism-transmitted disease is Kuru, a prion disease that affects the Fore of New Guinea. The practice has been stopped and the disease has fallen in prevalence (but due to its very long incubation period, some new cases are still occurring in the elderly population).

Other than that, there are a great many diseases that could be contracted by eating the flesh of an infected human. Any orally-infecting agent could cause infection. Parenteral (blood to blood) infection could also occur through cuts or abrasions and blood contact.
