I guess it would depend upon the house guest(s) that are being entertained. Whenever my husband and I have friends or coworkers over, we always (uaually) ask if there are any special entrees they would like, or if they have any restrictions (like food allergies!)
For example, I am allergic to mushrooms, and I would want to let my friend or coworker know - just as a heads up (and to save a trip to the hospital!)
A few of the GREATEST resources to use are the websites below, ranging from REALLY EASY to pretty advanced culinary skillz...
I personally would do a salad of some sort, with a choice of dressings (like two or three), some typr of vegetable (like grilled zucchini and squash or mashed potatoes and gravy) and then grilled chicken (which is pretty safe) with rice or something along those lines. I actually used this recipe for my in-laws (which are SUPER picky), and they loved it! It is here:

We love golosh.
It is like spaghetti but you use elbow noodles instead of spaghetti noddles. Spaghetti sauce, hamburger, a can of corn, peas, and olives. Top with Parmesan cheese. Yummy!

I like thsese beause they are simple and rich &tasty.
Roll chicken and cheese in torilla warps, line them up ina pan and cover in a combo of cream of mushroom and cream of chicken soup. Really good! And you can make as many as you need.
