Besides making fruit salad or smoothies, what can I do with kiwi? I buy the large crate at Sam's Club, and usually we eat them before they go bad. But sometimes we have a few that are over-ripe. I tried a recipe I found online for Kiwi Walnut bread and it was awful? Any other suggestions/recipes?

Fruit Pizza
Ingredients
1 (18-ounce) package refrigerated cookie dough
1 (8-ounce) package cream cheese, room temperature
1/3 cup sugar
1/2 teaspoon vanilla extract or other flavoring (almond, orange, or lemon)
Fresh blueberries, banana slices, mandarin orange sections, seedless grapes, strawberry halves, kiwifruit (or any other fruit you want), well drained
1/2 cup orange, peach, or apricot preserves
1 tablespoon water


Instructions
Preheat oven to 375 degrees F. Line an ungreased 14-inch pizza pan with cookie dough cut in 1/8-inch slices, overlapping slightly. Bake 12 minutes or until light brown; remove from oven and cool on a wire rack.

In a medium bowl, combine cream cheese, sugar, and vanilla extract or other flavoring; spread over cookie crust. Arrange fruit over cream cheese layer in any design you want (use your imagination).

In a small saucepan over very low heat, make a glaze by heating preserves and water. Brush glaze over fruit, making sure to cover the fruit that will turn dark. Refrigerate until ready to serve.

Note: This does not keep well, so plan on using it up. You may also use your own sugar cookie recipe in place of the refrigerated dough.

Makes 8 to 10 servings



Kiwifruit Sorbet Recipe
Ingredients
1 cup water
4 kiwifruits, pared
1/2 cup sugar
5 tsp lemon juice
1/2 cup light corn syrup
1/4 tsp grated lemon peel


Instructions
Combine water, sugar and corn syrup in saucepan. cook and stir 2 minutes or until sugar is dissolved. Puree kiwifruit in food processor or blender to equal 3/4 cup puree. Add lemon juice, lemon peel and sugar mixture. Pour into shallow metal pan, freeze about 1 hour or until firm but not solid. Spoon into chilled bowl and beat with electric mixer until light and fluffy. Return to freezer, freeze 2 hours or until firm enough to scoop.



Ben & Jerry's Kiwi Ice Cream Recipe
Ingredients
6 ripe kiwis
1 cup sugar
1 Tbsp sugar
2 large eggs
2 cups heavy or whipping cream


Instructions
Peel the kiwis and mash them in a bowl until pureed. Stir 2 tablespoons sugar into the fruit, cover, and refrigerate 1 hour. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in 1 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and whisk to blend. Stir in the kiwis. Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.

Chicken Breast with Kiwifruit Recipe
Chicken breast is poached with leek and celery, and served on a bed of kiwifruit with a citrus sauce for a light entree.
INGREDIENTS:
4 cups chicken broth
1-3/4 pounds whole chicken breasts
1 stalk celery, chopped
1 leek, white part only, chopped
4 kiwifruit, peeled and cut in 1/4-inch slices
1 orange, washed and dried
1 lemon
1 Tbsp butter
1 Tbsp sugar
1/8 tsp salt
1/8 tsp cayenne pepper
PREPARATION:
Bring chicken broth to a boil in large saucepan. Add chicken and simmer 10 minutes, skimming off any scum that rises to the top.
Add celery and leek and simmer an additional 10 minutes. Remove chicken from broth and keep warm. (Broth may be strained and reserved for other uses.)

Arrange kiwifruit in a fan-shaped pattern on a serving dish.

Zest the rind of half of the orange with a microplane. Sprinkle zest over kiwifruit.

Juice the orange and lemon into a small bowl. Heat butter in a small saucepan and add sugar. Stir until sugar is melted and begins to carmelize (turns dark), about 5 minutes. Add orange and lemon juices, stirring until incorporated. Boil until the sauce is reduced to about 2 tablespoons. Stir in salt and cayenne pepper.

Remove chicken breast from the bones, discarding skin, and slice into thin strips. Place chicken strips on top of kiwifruit and top with sauce to serve.

Kiwi Custard Pie

1 cup Graham Cracker Crumbs
2 tablespoon Unsalted Margarine; Melted
1 tablespoon Sugar
1 Envelope Unflavored Gelatin
¼ cup Water
⅓ cup Sugar
2 tablespoon Water
½ cup Evaporated Skim Milk; Heated
2 teaspoon Vanilla Extract
8 ounce Plain Low-Fat Yogurt
4 Whole Kiwi Fruit; Peeled And Sliced

Combine graham crackers crumbs, margarine, and 1 tablespoon sugar. Press mixture firmly onto bottom and sides of an 8 inch pieplate. Bake at 350 degrees for 12 minutes. Let cool. Dissolve gelatin in 1/4 cup water in a small bowl. Set aside. Combine 1/2 cup sugar and 2 tablespoons water in a small heavy saucepan. Cook over medium heat, stirring occasionally, until golden brown. Add milk; cook over low heat, stirring constantly, until smooth. Add dissolved geleatin; cook, stirring constantly, until gelatin dissolves. Remove from heat; add vanilla, stirring well. Pour mixture into a medium bowl; cover and refrigerate 30 minutes or until consistency of unbeaten egg white. Beat at medium speed of electric mixer 3 minutes or until light and fluffy; add yogurt, beating until smooth. Spoon mixture into prepared shell. Chill. Arrange kiwi slices on top of pie just before serving.

this makes a really good little treat. you take some kind of milk or dark chocolate fudge. then peel and slice the kiwi. then put the chocolate and kiwi together and wulah! It sweet and tarty. it is a spectacular taste no one can resist!

You could try puree-ing it with some strawberry and making a simple syrup and putting it in an ice cream maker and making sorbet. Thats tasty, or if you don't have a machine ( rival makes one for like 20 bucks) you could make homemade Popsicles

make a cream puff pastry, top with vanilla pudding and kiwi. drizzle chocolate. nice with whip cream also
