Yes they get offended sometimes and they have personality and feelings so be aware of how you communicate/relate with her.

Oh, yes, dogs can be just as bad as humans sometimes! My pit bull gets very upset when he has to go in his crate when we have company...he takes it personally and doesn't seem to understand that there are actually people in this world wants to be slobbered by him. And he will intentionally use the house as his potty if he is closed out from the bedroom at night. The good thing is, dogs get over things a lot quicker than humans.

She does not 'intentionally' pee and poop to make you angry. She is most likely stressed that she has to be separated from her family. Don't know what, exactly, you might be doing to 'let her know that she shouldnt do that' but I suspect that it isn't helping your relationship with her. Trying to punish a dog after the fact is not only extremely ineffective, it is also cruel. I suggest that you do some reading, or take a class, to understand how dogs learn.

Yes they like humans have feelings but unlike most humans animals are faster at forgiving. If the dog isnt nasty to your company I would let him stay in and have him sit if he is bothering someone not pet savy.

yes, dogs often do things that are bad to get your attention or because they are not hapy with you. My mom's dog likes to pee in her bed when hes' unhappy.
