Extra virgin olive oils are produced from the first pressing, which is performed within 24 to 72 hours of harvesting. Mechanical or hand pressing are the only methods used to obtain extra virgin olive oil. No heat or chemical processes are used. The oil obtained from the first pressing is the only olive oil that can be classified as extra virgin (or virgin, depending on the natural acidity level).

Extra virgin is from the first press and is the most pure of the olive oils. Olive oil which is not labeled as Extra Virgin is oil from subsequent pressing and is not as pure and doesn't have the light green appearance as extra virgin.

Extra virgin olive oil comes from fresh young olive whereas olive oil comes from older olive. Fresh young olive has more taste compared to older olive and that's why it's more expensive.

it refers to how many presses the olives recieved. i believe extra virgin is one press and olive oil is two or more
