Huh? Atheists don't do that but Jewish often do. Because god is considered too holy by them.
I think you have them mixed up. Atheists generally make a point of not capitalizing the word god, but still typing it, to emphasise the fact that this god is just one of many throughout history and no more important than any other.

Usually it's people of the Jewish faith who write it as G-d because the Laws forbid them to write the Supreme Being's name.

I'm not sure where you are citing your source material, but observant Jews do not write the word out and instead use "G_d" as they feel this is more respectful.
