The green color arises from the chlorophyll, which absorbs red and blue light. In the fall, as the leaf shuts down, the chlorophyll degrades.

As fall approaches temperatures drop and the natural enzymes in the leaves start to react with the green leaf and causes off colors such as red, yellow , etc. Eventually the leaf dies.

They are there all along, but masked by the stronger color of green chlorophyll. They appear suddenly because the green chlorophyll is absorbed or decomposes (I'm not certain which..sorry) as the tree begins to "wind down" for the winter.
