After cutting the cookies, use a smaller cookie cutter to cut a heart (or any other shape) from the center. Fill the hole with crushed hard candy (cinnamon or lemon jolly ranchers are my favorite for this), which will melt while baking and create a "stained glass" effect. (Line the cookie sheet with parchment paper for this.)
You can also make the cookies into balls, then press your thumb into them and fill the indentations with jam, jelly or preserves before baking. Much messier than my other suggestion.
Also, you can add about a tsp. of lemon zest OR 1 tsp. cinnamon and 1/2 tsp. ground cloves to the dough to spice it up.

try adding pumpkin seeds and lime--which is a great mexican twist to th sugar cookie.
cups plus 5 tablespoons granulated sugar
1/2 cup softened butter
2 tablespoons oil
Grated zest of 2 limes
2 eggs
1/4 cup lime juice
3 1/2 cups all-purpose flour
1/2 cup pepitas (hulled pumpkin seeds),
chopped, toasted (see note)
1 teaspoon baking soda
1 teaspoon salt
Preheat oven to 350 degrees F. Line a baking sheet
with bakers' parchment.
Cream together 2 cups sugar, the butter, oil and zest
of 1 lime. Add the eggs
and mix well. Stir in the lime juice.
Combine the flour, pepitas, baking soda and salt; stir
to mix. Add to the
creamed mixture; blend well.
Combine the remaining 5 tablespoons sugar and the lime
zest in a small bowl;
stir well to distribute the peel evenly in the sugar.
Using heaping tablespoonfuls or a cookie scoop, drop
balls of dough into the
sugar/zest mixture and turn to coat. Place on the
baking sheet. Flatten each
ball with 2 fingers, first in one direction, then at a
90 degree angle to the
first to form round disc-shaped cookies about 1/4-inch
thick. Bake for 9 to 10
minutes, or until the edges start to brown. Remove
with a spatula to a wire rack
to cool.

If you a still in the dough stage, try adding a teaspoon of orange or almond extract. Mix in about a teaspoon of ginger, allspice, nutmeg, or cinnamon to regular sugar cookie dough for a change of taste. You could even divide up a batch of dough and make several different flavors.

I also would like to reccomend the stained glass cookies like Amanda L. They really do look pretty!! I use cherry life savers and make sure I grind them fairly fine. Be sure to bake them on parchment paper though so you can get them off the pan. I like to jazz mine up by setting them on a lolli pop stick before I bake them - cookie on a stick!! I have a silver flower pot that I put some floral foam in and stick the cookies in the foam. Then you have an arrangement of cookies - makes for a nice presentation! ice around the egde with a star tip or write nice phrases on them (depending on the size of cookie) like "from the heart" and "Be Mine" and you're set! I'm making mine tomorrow night! Have fun!

It is easy to turn them into filled cookies. Just place a small amount of your favorite jam or preserve(not jelly) on a cookie and place another one on top and seal the edges with a fork. Poke a hole in the top with the fork and bake the recommended time.

why not try an espresso sugar cookie... you can buy espresson powder and throw it in for a little extra taste... or if you want to be creative why not try putting something a little out of the box in it.. saffron makes everything taste great and it will surely impress your friends.ginger is also a nice addition..if you want to try and add a filling why not go for an exotic fruit puree and add xanthan gum or agar to give it more of a jelly texture.or you could always just reduce it to hell and give it a great syrupy texture with amazing taste......http://perfectpuree.com/pp/products.php..

Cut holes in half of your cookies spread jam on the half without hole and put the one with the hole on top and bake. Make "paint out of egg white, little water and food coloring and write massages on the cookies. Place hot cinnamon candies around the edge and bake. Add lemon and lime zest to dough. and spice you like. Try dipping half in chocolate and white chocolate

you can add vanilla frosting to your cookies and since it's valentine's day color the frosting pink with food coloring and you could add sprinkles to the top. you could add strawberry or raspberry filling to your cookies just shape your cookies put a dent in the center add your filling in the center.
you could brush your cookies with milk and then sprinkle sugar on them before baking. you could add new flavors to your cookies by adding lemon,orange, lime or add these flavors to your frostings.
there are endless choices. you could put caramel on them if you wanted you could make stain glass sugar cookies by putting a jolly rancher in the cookie and bake them.
add chocolate if you want. if you add chocolate you could flavor the chocolate if you want by adding esspesso to make mocha frosting, and you could use any kind of chocolate if you want, milk, white, dark, semi-sweet. if you use white chocolate you could flavor or color it. make orange-white chocolate. whatever you want.

Add a little Ginger it's really good!!!! be sure to only add a little it will definetly spice it up and it's a not so common flavor but really good
