i dont want a recipe for a holiday i just want one so i can make dinner for my family

Here is my favorite family vegetarian meal: ASparagus pesto lasagne:
Asparagus pesto lasagna

1/3 C flour
3 ½ cups low-fat milk, divided
6T pesto, or more to taste
2T parmesan plus additional for garnish
1 tsp salt
¼ tsp pepper
2 tsp olive oil
1 ¼ lb asparagus, tips cut off and reserved, spears trimmed, and chopped into ¼ in pieces
1 clove garlic, minced
16 no-cook lasagna noodles (9 oz)
2 C shredded fontina or part-skim mozzarella cheese (8 oz) divided

1)Prehear oven to 350F. Whisk flour and ½ C milk in saucepan until smooth. Gradually whisk in remaining milk. Bring to boil over medium heat, whisking constantly, and boil 1 minute, or until thickened. Remove from heat and stir in pesto, parmesan, salt and pepper. Reserve 1 C white sauce.
2)Warm oil in pan and sauté chopped asparagus (not tips) and cook, stirring often, 5 minutes, or until tender. Add garlic and cook, stirring, 1 minute. Season to taste with salt and pepper. Remove from heat.
3)Coat 13x9 inch baking dish with cooking spray. Place layer of noodles in dish, overlapping slightly. Layer with half of cooked asparagus, ¾ C fontina, and half of sauce. Add another layer of pasta, remaining sauce, remaining asparagus and ¾ C Fontina. Top with layer of noodles, reserved 1 C white sauce. Arrange reserve asparagus tips over top and sprinkle with remaining fontina.
4)Bake, oncovered, 35 to 40 minutes or until golden. Let stand 10 minutes. Serve with additional grated parmesan cheese, if desired.

One of my favourites (and I'm vegetarian too) is spaghetti & veggieballs! Super easy!
Mashed potato / Sweet potato / Swedes (whatevers available or a combination!)
Sweetcorn, peas, carrots or any other vegetable (I've often used aubergine or courgettes) steamed & chopped up
Some fresh herbs
1 or 2 eggs (depending how many you're making)

Combine these ingredients until you can make firm balls from them. Add some breadcrumbs if they're too wet. Put in the fridge if you have time to set (not essential though)

Make or buy a tomato sauce (Dolmio - if in the UK) and heat it up. Once it is piping hot add the veggie balls and allow to absorb the flavour & cook through for about 10 - 15 minutes. The egg will bind it so it won't fall apart.
Serve with spaghetti!

Addictive Sweet Potato Burritos

"Once you've had one - you'll want another. The recipe is a little different from most burrito recipes, but I've had many, many requests for it. Serve these with sour cream, chopped green onions and salsa. For vegan burritos, omit the cheese and sour cream. These may be made ahead of time, individually frozen, then heated. For an interesting variation, try deep frying these tasty burritos."

Original recipe yield:
12 burritos

PREP TIME 30 Min
COOK TIME 20 Min
READY IN 50 Min

INGREDIENTS
1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.
Bake for 12 minutes in the preheated oven, and serve.

Veggie enchiladas.

Dip the tortillas in enchilada sauce and fry them in a skillet until they get hot. Spoon in some hot refried beans, shredded lettuce, chopped onions, and shredded cheddar cheese. Roll em up and sprinkle more cheese on the top and bake them in an oven at around 400degrees for about a half hour until the cheese melts and bubbles.
You could also make a taco salad on the side with lettuce, tomatoes, olives, and kidney beans, salsa, sourcream, cheese,corn chips, and chili powder to go with your enchiladas.
Some kind of frozen fruity drinks(virgin ones for the kids) go well with this hot mexican stuff. Mom always made a frozen daquiri type thing with banannas and pineapple in it and a touch of lemonade for a kick. It was a fun meatless meal.

You can't lose with this spaghetti recipe.
Boil 1 1/2 pkgs. Barilla plus multi-grain noodles until just tender. Drain but do not rinse.
At the same time, in another pot, add one medium onion diced and 1 medium green pepper diced along with 1/2 pkg. of Morningstar vegetarian sausage crumbles and a little peanut oil. Cook until onion is transparent. Add two large 29 oz. cans of your favorite vegetarian spaghetti sauce. Add one tsp. basil and simmer. Serve sauce on top of noodles along with some good Italian bread. and a tossed salad.
I promise you everyone will love this (even the meat eaters in your family)

Tofu, Rice, Braggs(A soy type of sauce, healthier then soy sauce) Cashews & Asparagus. Bake the fresh Asparagus, 20ish min. add salt to taste, fry up the tofu, add Braggs, cook the rice in the usual way & bake, or toast the cashews. Doesnt have a name & I can't recall if I made this 1 up, or if I found it online sumwhere. ENJOI!

WHITE SAVOURY SAUCE (you can make yourself)
CELERY STICKS(finely chopped) 2
ONION SLICED 100G
MUSHROOMS SLICED 150G
BAKED BEANS 750G
LASAGNE SHEETS 6
CHEESE GRATED 70G
OIL FOR FRYING AND SALT AND PEPPER FOR TASTE

fry off the celery,onions and mushrooms until softened, combine with the baked beans and season.
in a lightly greased deep dish start first with a layer of beans mixture, then white sauce followed by a layer of lasagne and repeat finishing with a final layer of white sauce, sprinkle the grated cheese on the top and bake in a moderate-hot oven 200deg c/400deg f/gas 6 for 35-40 Min's

For a quick fix, I love veggie wraps.
I take two prepared bags of the microwave-in-bag steamed vegetables (I like the Asian medley for the wraps), and wrap it up in a "Flat Out" tomato flavored sandwich wrap. My boyfriend likes his with a slice of cheese in it. Then I roll them up, and stick it in the broiler (or toaster oven) for a minute, and wah-lah!
It's super easy and takes less than 10 minutes!

This vegetable lasagna is really good, but I made it and I would double the vegetables and tomato sauce used.

Just substitute any meat dish with soya.

So you can have spag bog, lasange, pizza, salad with tofu, prawns, tuna, the list is endless.
