I heard people in the medical field should apply for this if they have a conviction on their record. Can someone please give me more information about it. Thanks

Everyone has the definition of a pardon right on the money. Pardon's are as a general rule reserved for persons who are incarcerated.
On the other hand I think you are elduing to a process of having a criminal conviction expunged. This is a process by which someone who has a criminal conviction can show the judge that the conviction should be removed from their record for a very good reason.
Several factors are weighed by a Judge in accepting this motion. The age of the person when the crime was committed, the seriousness of the offense, whether or not this was a one time occurrence and the person requesting this action has showed they have no propensity to be involved in criminal behavior, and they have made substantial progress in their life and are being negatively affected by this record.
These motions are hard to get approved, but can succesfully be argued.

A pardon is an "official" forgiveness of a criminal act. In USA only Governors and the President may issue pardons.

Some states will not allow a nurse or a doctor to practice if they have a felony conviction on their record. Sometimes it depends on the kind of crime committed.
