Hi, I was hoping to make some cookies for Valentines day to give to someone, only I have just about zero cooking ability. I'm willing to try though (and probably make several bad attempts before getting it right)

Anyone have any relatively simple or creative cookie recipies? Regular chocolate chip is fine, but something a little more interesting would be appreciated. Thanks!

Cupid Cookies
30 min 20 min prep 36 servings 3 dozen

1 cup butter or margarine, softened
1/2 cup sugar
2 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1/2 cup strawberry jam

Mix butter or margarine and sugar in a large bowl.
until smooth and creamy.
Add eggs.
Mix well.
Combine flour and baking soda in a medium bowl.
Mix well.
Place by teaspoonfuls on a greased cookie sheet several inches apart.
Using your thumb, make an indentation in the center of each cookie.
Fill each indentation with strawberry jam.
Bake in a preheated 375-degree oven for 8 to 10 minutes.

OR

Pink Cookies

You can use any kind of cake mix for this recipe.

Change to: cookies US Metric
1 (18 1/4 ounce) package strawberry cake mix
1/3 cup vegetable oil
2 eggs, slightly beaten
1/4 cup water
1 cup semisweet chocolate chunks

Combine the cake mix,vegetable oil,eggs,and water in a large bowl and mix well.
Fold in the chocolate chunks.
Drop by spoonfuls onto a ungreased cookie sheet.
Bake at 350.

I am making the Christmas Cut outs (using the Valentine Cookie Cutter of course). I got the recipe at Epicurious and it's the best I've ever used. It uses 2 tbsp. sour cream in the dough (not more otherwise it gets sticky). Don't let the butter get too soft either bc it messes up the dough. Always chill the dough two hours for best rolling results. The icing recipe that goes with it is too thick so it has to be thinned more with milk.

Otherwise you can "cheat" and use the pre-made stuff from the grocery store but it's not nearly as good!

Buy the already made sugar cookie dough at the store, roll it out and cut into heart shapes then dip one half in melted milk chocolate. When that dries, melt a little white chocolate in a zip lock bag in the microwave (30 sec at a time till melted) and put a small hole in one corner and drizzle over the entire cookie. Looks really pretty and very little work.

These are the perfect cookies for when you need something fast...and no baking required

Haystacks

1 1/2 cup of white sugar

1/2 cup of butter (or margerine)

1/2 cup of milk

1/2 cup of cocoa powder

1 tsp of vanilla extract

3 1/2 cups of rolled oats

1 cup of sweetened coconut flakes

Combine sugar, butter, milk, cocoa powder and vanilla in a medium sauce pan over medium/high heat until it reaches boiling...make sure you stir it frequently so the surgar doesnt burn

Remove from heat and stir in rolled oats and coconut

Drop tablespoon sized "stacks" on to waxed paper and allow to cool. To speed up the cooling process you can place the cookies in the refigerator.

White Chocolate and Cranberry Cookies
I make a basic chocolate chip cookie dough, but use white chocolate chips, dried cranberries. They are awesome!
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla
1 1/2 cups all-purpose flour
1/2 tsp baking soda
3/4 cup white chocolate chips
1 cup dried cranberries
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.
Yield: 2 dozen.

Or you can make basic sugar cookie cut outs in heart shapes.
Sugar Cookies
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 tsp vanilla extract
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt
1 In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2 Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3 Bake 6 to 8 minutes in preheated oven. Cool completely.
Servings: 60
Yield: 5 dozen
Preparation time: 20 minutes
Cooking time: 8 minutes
Ready in: 3 hours

There is a recipe for old fashioned snickerdoodles on this link that are simply delicious. They are easy to bake and everybody loves them. Give them a try, you'll love them.
