BARBECUE STEAK IN FOIL
8-10 oz. Sirloin tip steak (per serving)
2 tablespoons Kraft Classic Barbecue Sauce
1 onion, chopped
1 clove garlic, minced
1/2 green pepper, seeded, chopped
1 tablespoon butter or olive oil
2 18 inch squares heavy duty foil
salt, pepper and garlic powder
Cut the sirloin tip steak into 1 inch cubes. Season with salt, pepper and garlic powder.
Place steak cubes in center of foil (shiny side of foil facing inward) and cover with remaining ingredients.
Wrap up into a foil packet or envelope, with seam facing up and with a secure, double fold to retain juices within the packet. Place over sizzling hot coals and cook for an hour or less, according to desired doneness.
Serve with buttered and grilled bulky rolls.
Optional: add a few cubes of your favorite (melting) cheese to the packet. Fresh mushrooms and a few spoonfuls of condensed mushroom soup make another nice variation.

Make sure your grill has been pre heated for atleast 10 min. For sirloin steaks you shouldn't have to marinate it as there is fat marbling the meat already.The main reason you marinate a cut of meat is to tenderize it by breaking down the connective tissue.I brush the steaks with a little oil,you can use flavored oil, and a little pepper. When the grill is heated I place the steaks on it and sear the one side,cooking it 4-5 min before giving it a 1/4 turn to give it the nice grill marks. After 8-10 min on one side I flip the steak and repeat the process. In the last 5 min of cooking I season the steak with salt,pepper,garlic powder and a light brush of B-B Q sauce,both sides. The way I was taught to tell how a steak is done is by touching my thumb to each finger on the same hand.When you put you thumb to your pinkie finger and you touch the muscle at the base of your thumb that is how a well done steak is to feel,your middle finger is medium and your pointer finger is med-rare.

You don't need to marinade it...you could use Montreal steak seasoning, otherwise you can marinade it in Italian dressing if you want.
I would simply grill it with pepper and garlic salt - I prefer Lowry's.
You will need to cut it into sections beforehand because you cannot cook it well and medium rare together you will need to pull her's off first.
Depending on the thickness, you will need to time it accordingly but try to only have one side cook first, then the other and that's it - no turning back and forth. For a one inch steak, figure only a few minutes on each side. You will need a bit more on the well done piece. I go by how it gives to the touch - you might want to use a thermometer or cut it.

Marinating possibilities are almost endless. All I can say is experiment.
As to telling when a steak is done, without cutting it, merely push lightly on the meat at various points. As the meat cooks(from the outside in) it "firms up". The firmer, the farther along it is. Medium rare is softer than well-done. It takes practice to do it right. Unfortunately, you will have to eat a lot of steaks. Knowledge is not cheap! (LOL!!)

Ok its simple u need to marinate the steak and use Stubs meat rub its the best and use this stuff its meat tenderizer and it helps!
then u need to let it soak in for a few hours , then cook it and its reall good!!!!!!!1
