I want to thank everyone who answered my question. I hope this doesn't sound like I'm not grateful, but reading the answers inspired me and made me remember how o do it myself: Cut a "Mealy" Idaho or Russet potato into strups or wedges, etc. Heat oil (I used Canola, my Mom used to use Crisco, but we all know that's a no-no these days)to 325, after soaking raw potatoes in ice water to get rid of some of the starch and make them better able to crisp, place well-dried raw potatoes in oil for about 5 min. to cook insides of poato, remove to paper towels or rack. Heat oil to 359-375, add fries a second time to crisp and turn brown, remove again to p.twel or rack, salt immediately (I use Kosher salt) and enjoy! Thanks again to everyone who jarred my memory on this one. (My husband & I enjoyed wonderful Fish & Chips that night.)

Put about 2 inches of oil in a deep saucepan and heat on a high flame for about 3 minutes. Carefully add chipped potatoes (expect there to be a lot of hissing and spitting) and moving occasionally with a metal utensil cook until golden. Remove from oil (best done with a metal spoon that has draining holes in it) and place on kitchen paper to soak up any excess oil. Serve

cut your spuds up so they look like fries. cook them in oil. oil should be 350 degrees. check oil temp by cutting bread in one inch cube and toss it in. it should be a nice brown crouton in just under a minute. toss in the potatoes and fry. stir them a bit so they don't stick together. drain on paper towels, shake on some salt. yum, fish and chips, my fav.
