I have a very irregular schedule so when I catch some days off I like to use my slow cooker and make some roast beef, rost pork, beans & pork, chili con carne etc. Also lasagna is one of my favorite things to do with fresh garlic bread and paella valenciana. Also picking a regional food or country, playing & exploring along that is something that I love to do & I wish on having more time to do so.

I make braised pork chops a lot, it's easy to make just one or two. Also, I never have time for a big breakfast, so once a week I usually make pancakes, eggs, toast or other breakfast things for dinner.
I freeze everything in individual portions so that I can take it out of the freezer the day before and have it ready to cook with when I get home. When I have time off I'll cook some meals and then freeze them so I have at least two nights where I don't have to cook dinner. I'll cook up a big batch of spaghetti sauce and freeze it in small portions using it later for pasta, pizza, or even over chicken.
There's always the usual pasta, rice, chicken, baked potato, and fish that seem to appear on my table continually.

Cooking a healthy meal for one is a challenge, but it can be done. I've been cooking for myself for a while now and I have finally mastered it to the point where I don't have to eat leftovers for a week.
I still buy in quantity, because it is cheaper. You know 4 boneless, skinless chicken breast etc..., but I separated at home into individual portions, then freeze.
I make a big batch of soup, eat one time and freeze the rest in portions. I make a large quantity of spaghetti, then freeze the rest.
In reality I usually only have to cook once or twice a week, because I usually have something good in the freezer.
It takes no time at all to prepare small portions of fresh vegetables in the microwave. Even faster yet are salads.
My goal is to have a home cooked meal everyday...not leftovers.

My other half works a lot of nights as a chef so I often find myself wondering what to cook. I usually end up with steamed veggies and grated cheese, or else I'll have any leftovers from earlier in the week, like if we make curry and there is anything left I'll freeze it and then take it out for nights when I am alone. pasta is also easy to do for one person. Or I'll buy a pack of chicken thighs and have those with some bread and mayo.

When I was single, I was in a busy lifestyle at the restaurant and not much time to cook unless it was a Sunday or Monday. I lived on snacking off food at work, and at home, cheese quesadillas, curried basmati rice, and pasta bakes that would last me several days.
My job was cooking for other people. The last thing I wanted to do was cook for myself.

One of my FAVORITE, cheap and very simple recipes is to take a box of mac and cheese. cook the noodles and throw in a little fresh broccoli, red and green peppers, and green beans. then put a little bit of basil in and cook like regular mac and cheese. When the noodles are done so are the veggies and especially the basil and peppers adds a little different flavor from the same mac and cheese. So cheap, simple, nutritious and yummy!

Another idea is make meat loaf.
It's a great left over.
I follow the directions on the back of the McCormicks Meat Loaf Seasoning Mix, and any left overs I put in the refrigerator.
Look on the food network website to see if they have any ideas.

Nothing complex. I usually make something simple like frozen pizza, spaghetti, tacos, mac and cheese, etc. The occasional fast food meal is also always good.

I Like to fix spaghetti, or a soup, or even bake a ham on the weekends then I can eat on it through the week after work.
Otherwise I'm eating fast food.....
