I disagree with nohenricks - I think the blue cheeses used for the sauce should be of a more subtle variety. Stilton's OK, also Besse Bleu and similar but I think the best I've tried (so far) is Bleu Benoit which is made at a monastery in the mountains right on the Quebec/Vermont border.

Everything is a matter of personal preference. Any cheese that you like will taste good on top of any steak you like. Simple as that!

No cheese on fine steaks. No steaksauce on fine steaks.
If you have a filet mignon, all this is needed is a small sprinkle of salt and freshly ground pepper.
Also - DO NOT overcook a filet. They should be served rare to medium rare.
