Well, flour is what makes up the bulk of the loaf - bread pretty much IS flour.

Sugar feeds the yeast, which you need in order for the bread to rise. You could probably get away without using sugar, but it would take the yeast longer to get going - and you mustn't use too much sugar as that would kill the yeast.

Sugar is an agent to help yeast rise and to give a certain amount of flavor to the bread. And flour is the basic body of bread; being a grain product.

well flour is what essentially the bread is made of, but if you want to know scientifically the sugar & flour ( both carbs) provide a food source to the yeast so it can reproduce and make the bread rise.
