I'm buying fresh mussels and I'm going to cook them in butter, onions, garlic and white wine, then serve them over linguine.

I am coming to your house, and I will bring the wine. My favorite to cook them in is chardonney, nice mild flavor, but I often use chablis. I also add fresh herbs, such as parsely, chives and basil. I am jeolous! I cant get them this time of year!

I always use Pinot Grigio. When you want to use white wine as cooking wine, use white wine that doesn't have a lot of acid. It doesn't need to be very expensive but at least you can drink the wine. And don't use Riseling. That's not good for cooking mussels. Anyway, use dry white wine that you are able to drink and that is not too sweet and acidic.

change the wine or beer to grape juice, lemon juice, water, cider vinegar, something else. There is no law that says you have to slavishly follow any recipe in this whole world other than those to actually make the wine or beer yourself and those are sort of set in stone. If you don't follow those to the letter you are likel y to have the wine or beer all over the cold storage room in very short order.

I'd go with a sauvignon blanc, or a pinot gris/grigio. Both are nice clean and crisp wines. Chardonnay is too oaky and buttery for me. Riesling is too sweet for me.

You can use any white table wine. It really doesn't matter for cooking mussels.

What time is supper? Can I come over? I'll even help clean up! Get cheap white wine from anywhere. You can't taste the difference if you use fancy white wine.

Any cheap white wine. I use chablis for cooking. Save the chardonay for drinking.

Riesling or sauvignon blanc or both nice, you could use some for cooking and the rest to drink with the meal.

A chardonnay. Something not fruity that you would drink. Even a pino grigio would work. Avoid riesling!
