Well it depends on the age.
Children can pass out bubbles/seeds or programs.

Teens & adults can do a special reading or music, greet people signing the guest book, be an usher. They can help with the wedding preparation, help with the reception, offer a toast.
Even though you may have someone else cater the event, it's nice to have someone dependable to make sure thngs are running smoothly so you can enjoy your wedding.
Go through your whole weding in your mind. You'll be surprised at all the jobs you will be able to find.

You could have them help in your preparation, decoration of your reception place if applicable, cut the cake for you
Participation would be welcomed by them I am sure. Even acting as a guide at the reception to help some people find their seats
Maybe they could help you make centerpieces or wedding favors
If they have a special talent, dancing singing etc, they could do that at your wedding

Have them offer a reading or song to you and your groom.

The other thing would be to have your pastor call up the group of people with blessings for you. Ask them to join the alter and surround you as you say your vows.
