please let me know how you can get them hot , cripy, and well seasoned

6 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Preheat the oven to 450 degrees F.
Peel potatoes and cut lengthwise into quarter-inch thick slices. Cut again into 1/4-inch thick fries. Place the potatoes into a bowl with cold water; this will help keep the fries crisp. Just before cooking, drain water and place on paper towel, pat dry.

Put the potatoes in a bowl; add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown. Cook for approximately 30 to 40 minutes, turning frequently until golden brown.

Remove from oven, allow to cool for 1 or 2 minutes and serve.

Double Fried French Fries (Tyler Florence - Food 911)

Peanut or other vegetable oil, for frying
2 pounds baking potatoes, like russets
Salt, to taste

Pour oil in a deep fryer or heavy saucepan to reach halfway up the sides of the pan. Heat to 325 degrees F, use a deep fry thermometer to determine this. While the oil is heating, peel the potatoes and push through a French fry cutter to form uniform sticks. As you go, place the cut potatoes in a bowl of ice water to release some of the starch and to keep them from browning.
Dry the potato strips thoroughly, this will keep the oil from splattering. Fry the potatoes in batches so the pan isn't crowded and the oil temperature does not plummet. Cook for 3 minutes until they are soft but not browned. Remove the potatoes with a long-handled metal strainer and drain on brown paper bags.
Bring oil temperature up to 375 degrees F. Return the par-fried potatoes to the oil in batches and cook a second time for 4 minutes until golden and crispy. Drain on fresh brown paper bags then place in a serving bowl lined with paper towels. Salt and serve immediately.

Cut up potatoes length wise into a jullienne style and soak them for about 20-30 minuets. Drain and pat dry..Make sure you pat them completely dry. Bake them in the oven for a bout 20 minuets. Pull out of oven and season immediately.

you can use a deep saucepan with a wire basket but this can be dangerous as you cant control the temperature correctly and you risk having a fire,best to go and buy a fryer or oven bake instead

You can make fries by baking them - without using any oil. Using a cookie sheet, spread the fries on it so there is a little room between each and none on top of each other. They will be crunchy, hot and you can use any seasoning you like on them - apply before baking.

broil them. Maybe 7 mins or less per side, keep an eye on them...seasoned salt works good
