For smooth applesauce:
6-8 medium apples, peeled and quartered
1/2 cup water
1/2 to 3/4 cup firmly packed brown sugar
1-2 tsp. cinnamon (to taste)
In large saucepan, combine apples and water. Heat to boiling. Simmer covered over low heat, 15-20 min. or till tender, stirring occasionally. Stir in sugar and heat through.
For chunky applesauce, combine brown sugar, cinnamon and water. Add apple pieces, and simmer covered 15-20 min. till tender.

Chunky Cinnamon Applesauce
INGREDIENTS
8 medium tart apples, peeled and quartered
1 cup water
1 cup sugar
1/4 cup red cinnamon candies
DIRECTIONS
Place apples and water in a 5-qt. saucepan. Cover and cook over medium-low heat for 20 minutes or until tender. Mash the apples. Add sugar and candies. Cook, uncovered, until sugar and candies are dissolved. Remove from the heat; cool. Refrigerate until serving.
Serves 12

Peel and core apples(Macintosh are the best) Put them on a cookie sheet and bake at 350 for 15 minuets. Take them out of the oven and put them into a sauce pan.Add Cinnamon and cook until it cooks down to the desired texture you like. Let it cool or eat it warm!

basics:
you need apples that cook to a mush...so buy golden delicious apples, say 7. Peel them, cut them in half, take the core and the pips out, then slice or cube them.
Put them in a pot large enough to hold them, take about a 1/2 cup of water and add that to the apples and as much cinnamon as you like for taste.
Then cook until they are mushy.
If you have a blender use it to make then into apple sauce, if you don't have one eat it like it is, or mash them completely with a fork.
Note: I make mine without sugar. If you like sugar try to use Splenda, it's healthier, about 2 tablespoon.
