so my boyfriend asked me to make him a salad for lunch, and he told me what he wanted in it..
first off, he wants lettuce AND rocca leaves (dont ask..) i know i'll be chopping the lettuce, but i dont know about chopping rocca leaves up because it just seems wierd. how else can i present it?
also, i'm thinking of making a salad dressing to go with it, but this salad also includes halloumi cheese. halloumi is a little salty, for those who havent tried it, and i'm planning on grilling it just a bit.
what kind of dressing would go best with the cheese and the leaves?

Firstly, tear the leaves, don't cut as the lettuce etc will react with the metal and by the time he eats it the lettuce will have black edges. How about a mustard vinagrette salad dressing?

Yum--how about a rasberry vinaigrette? Or, Paul Newman's Low-fat Sesame Ginger--that stuff is kicky!

I usually have a balsamic vinaigrette on my salad with feta, which is also salty. Seems to work well.

Otherwise, how about a honey dijon?

I would use a balsamic vinagrette, or a raspberry vinagrette.Maybe light italian....
