Glue has to have an activator to cure, and generally the package is designed to prevent exposure to that. The glues you may be referring to would be aerobic, which means they cure when exposed to air. The bottle keeps the air out so no curing. Notice how there is usually some cured glue around the neck or lid.
Other curing mechanisms are exposure to light, or a second chemical (catalyst) - think two part epoxy.
The packaging is also usually made from material difficult to stick to, so if it does cure it can come off easily.

Glue does not stick until it is cured(Engineering term for dry and effective).
It has self life and during that time it is still usable but most glue will stick and build up on the side of the bottle.
So look at some old bottles you will notice it.
PS:
Most answers are valid within the limits of self life. There are glues that will and will not cure in the presence of air, that depends on again the type of glue.

The bottle is made of a material the glue doesn't stick to. Sounds circular, I know, but that's why.

it is air which is needed for the glue to dry up and stick the objects to which it is applied. since the bottle is capped airtight, the glue was not allowed to dry up and stick the bottle.

Because in the case of glue, cohesive property is greater than adhesive property. Somewhat like mercury and totally opposite to water.

When you cap it, the moisture stays in and the bottle stays humid.
Uncap your glue and you'll see that it'll dry up.
