Couple of good size tatties. mash them up and mix in cooked onion and a tin of corned beef. you can use this mix for corned beef pasties or just roll in into patties and fry them up. yummy. if you want you can batter them and deep fry.

It's easy!
With those ingredients, you can chop and fry the onions in a frying pan or large bottomed saucepan, if you have some garlic or/and green and red peppers, that's even better.
chop corned beef, add to onions, dissolve oxo in a mug of boiling water and add to pan, chop potatoes small and add to pan, simmer slowly with lid on if you can until potatoes are soft. Add a bit of tomato ketchup, Worcestershire sauce if you have and even a bit of chili powder and a tin of peas. DO NOT ADD SALT. When ready, serve with the boiled rice. Delicious!

Fry some potatoes with an onion and spices until they are nice and done, my husband does put some bouillion in his buckaroo potatoes for a litle more flavor and put a lid on them and let them steam until totally done. If he doesn't have any other meat he cuts bacon up in little pieces and browns a little then all of the rest of stuff and this is the way the cowboys used to cook their potatoes on the campfire. We have done this sinve we got married 35 years ago and still like them.

My version of corned beef hash
Fry corned beef in butter with mash potato and leftover savoy cabbage (or fried onions). Make it crisp up a bit. Serve with tomato ketchup of course.

Corned Beef With Honey & Mustard Sauce

Put corned beef in a kettle; cover with water and add some spices (peppercorns, bay leaf etc. ). Simmer until tender. Place meat, fat side up, on a rack in broiler pan. Sprinkle brown sugar over the meat. Broil about 4 to 5 inches from heat until sugar bubbles. Slice meat and serve with the honey and mustard sauce.

Honey and mustard sauce sauce: In a saucepan over low heat, melt butter; stir in flour until smooth. Add dry mustard, 1 tablespoon sugar, some salt and honey. Cook, stirring, just until bubbly. Gradually stir in milk, stirring constantly until mixture thickens and boils, about 1 minute. Add about /2 cup of the hot mixture to the beaten eggs, then quickly stir egg mixture back into the hot mixture in saucepan. Cook over medium heat, stirring constantly, for 1 minute longer. Remove from heat and stir in the 1/4 cup vinegar.

You can make it without the eggs even with less mess:)

Serve it with the rice (made it on the usual way).
