This recipe makes 25 servings my family loves it
3/4 cup granulated sugar
1/3 cup evaporated milk
1 tablespoon butter
1/8 teaspoon salt
1 cup mini marshmallows
3/4 cup semisweet chocolate morsels
1/2 teaspoon vanilla extract

combine sugar, milk, butter and salt in saucepan bring to rolling boil over medium heat stir constantly for 4-5 minutes remove from heat stir in chocolate marshmallows and vanilla stir 1 minute or until marshmallows are melted pour in a 8x8 inch baking dish lined with foil place in fridge 2 hours or until firm remove and cut in squares store in air tight container in fridge stays good for weeks, if you need more you can just double the recipe.

This is my favorite, very intensely chocolate, not too sweet, and good without nuts also:

KARO QUICK CHOCOLATE FUDGE
1/2 c. Karo light or dark corn syrup
1/3 c. evaporated milk
2 pkgs. (8 oz. each) semi-sweet chocolate
2 tsp. vanilla
3/4 c. powdered sugar, sifted
1 c. coarsely chopped nuts (oat)

Line 8 x 8 x 2 inch pan with plastic wrap. In heavy 2 quart saucepan, stir corn syrup and milk. Add chocolate. Stirring constantly, cook over medium-low heat until chocolate is melted. Remove from heat. Stir in vanilla, add powdered sugar. With wooden spoon, beat until smooth and creamy. Stir in nuts. Turn into pan. Refrigerate 2 hours or until firm. Turn onto cutting board. Peel off plastic wrap. Cut into squares. Makes 1 1/2 pounds.
