2 cups all-purpose flour
1 teaspoon salt
1/4 cup shortening
1/2 cup water, lukewarm

Combine flour and salt; cut in shortening with a pastry blender until fine particles.
Add the warm water gradually and toos with fork to make a stiff dough.
Form into a ball and knead thoroughly on a lightly floured board until smooth and flecked with air bubbles.
To make dough easier to handle, cover tightly and refrigerate 4-24 hours before using; let return to room temperature.
Divide dough into 8 balls (or the recipe says 11 balls for 8 inch tortillas) and roll as thinly as possible on a lightly floured board or between sheets of waxed paper.
Drop onto a very hot ungreased cast iron skillet or griddle and cook about 20 seconds.
Turn and cook a few seconds on other side.
Repeat with remaining tortillas.
Either use at once, or these can be tightly wrapped and refrigerated or frozen.
If desired, you can replace 1/2 cup of the flour with cornmeal or wheat flour (my kids won't eat it that way -- yet!).

OMG yes! I make these at least once a week!

2 cups AP flour
Good pinch of salt
Several shakes of ground cumin
1/4 cup canola or veg oil
2/3 cup warm water

Blend the first 4 in a processor, then with it running drizzle in the water and mix for 10-15 seconds. Take it out, knead it for a couple minutes, divide into as many balls as you want (I usually make 8), cover with a clean towel and let rest for 30 minutes.

I press mine in a tortilla press, or you can roll them out and cook in a dry cast iron skillet.

So much better than store bought!

Mix a little mayo & garlic powder with a pkg. cream cheese. Spread on flour tortillas. Add a slice of ham, ham & Cheese, Turkey, chopped green onions, or whatever you like. You can just keep them plain after spreading with cheese mixture. Chill a little while and slice into serving pieces.

They've got a whole selection I bet. You could even get corn tortillas if you were so inclined.
