Cooked rice can be dangerous when it is left at room temperature for too long.
My class has just examined some agar plates innoculated with cooked rice in health science classes at university. The cooked rice tested had been left at room temperature for 1 day. When the plates were examined growth of bacillus cereus was found. This bacteria’s spores can survive the cooking process and will germinate on cooling to room temperature. The toxins formed can either cause diarrhoea or vomiting. These toxins survive further cooking processes.

Cooked rice may be a potential source of food poisoning.

A bacterium called Bacillus cereus is a common contaminant in wild rice and a disease called "Chinese restaurant food poisoning" is caused by it. It strikes when wild rice is cooked in the morning (= B.cereus spores get activated by 100oC) and kept in relatively low serving temperature all the day. After several hours the count of B.cereus bacteria increases to the level of 1 000 000 CFU/g and a lot of emetic toxin is produced by this bacterial growth.

To avoid this, never hold wild, cooked rice in warm environment for longer periods!

If the rice is cooked and chilled, no problems are obviously encountered when reheating it. You must remember, however, that bacteria do not get killed by freezing them, and after reheating they start their metabolism - and potential toxin production - again.

Rice dishes can harbour the Bacillus cereus bacteria. The bacteria can form spores which are not easily destroyed by heat and will survive cooking of food. If food is cooled slowly or kept warm for some time before serving, the spores will germinate and produce bacteria. Bacteria can multiply rapidly at these temperatures and produce a very heat resistant toxin which will not be destroyed by subsequent reheating.

You have to be careful with this. Cooked rice can carry a bacteria that can make you ill. To avoid this rice has to be cooled quickly and thoroughly before being covered & refrigerated.

You can reheat dishes ONCE only to prevent food poisoning.

To reheat rice I place this in a microwaveable bowl, sprinkle with cold water, cover with cling film & ding for about 2-3 mins until piping hot. It MUST BE piping hot to kill any bacteria.

Or if it is a large quantity of rice, you can stir fry it.
Crumble the rice so its not one hard mass.
Heat 1 tbsp of oil in wok for about 1 min.
Crack an egg into wok and scramble with your wooden spoon. Add cold cooked rice and toss thoroughly. Toss and turn rice regularly so it doesn't burn and stick on bottom.
Add pinch of salt and a shake or two of soy sauce & mix thoroughly. Serve when rice is sizzling and begins to make pop noises. (if your cooker heat isn't very strong, I'd say about 10mins.)
You can add cooked strips of meat and vegetables if you wish after adding rice to wok.

A favourite is to add raw chopped bacon, finely diced onion and sliced mushroom after scrambling egg in wok. Cook for 2 mins before adding rice. This is what I call breakfast fried rice - nice for weekend lunch!

Beware that cooked rice is something that can become dangerous (food poisoning) quickly. Even if refrigerated, don't reheat after more than 24 hours.

yes but if not done properly you can get yourself a nasty case of food posioning.

cool the rice quickly- within one hour then put in the fridge, when reheating add a bit of water and make sure it reaches around 80 degrees, or if u dont have a food probe till its proper hot and steaming :)

Well the answers here vary a lot - I had also heard that you can get food poisoning from re-heating cooked rice, but I've been doing it for years without ill-effects.
I just make sure it's very hot before serving, I usually just microwave it or use it to make fried rice (yum).

you first answerer is wrong!!!
when you put cooked rice in the microwave it dries out,it does not get soggy.
Put a little water in the bowl ,and then reheat it.
