Flight attendants are hired with the expectation that they will have good common sense when the unexpected arises. All of the planning and training in the world would not necessarily be of benefit, as each and every emergency is different. Basically, they are trained to evacuate through any usuable exit, be it a door that is intact, a broken part of the fuselage, an overwing exit, etc. Their main goal after getting as many people out as possible is to keep them away from the aircraft, provide first aid if possible, try to get a head count and generally help as much as possible until emergency crews arrive.

Probably die if it's unexpected, as they will be standing up. If they expect it, they try to assist getting everyone ready for the crash, then assist with exit, if anyone is still alive.
The main question is, if it did crash in a forest, would it make a noise if no one was there to hear it?

99.9% of the time they are well aware of the crash far enough in advance to help, but in your scenario they have to do their job just like they knew it would happen. Most of the time there are few survivors if the crash is unexpected.

They know how to evacuate the passengers from the plane as quickly as possible while keeping some semblance of order. In most cases there's not enough left of the plane (or the passengers) to evacuate though.
