i have pasted the recipe underneath, i do not want to use the gruyere cheese or swiss cheese what can i substitute?

Sauce
2 cups canned, diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup onions, diced
1/2 cup green bell peppers, diced
2 cloves garlic, diced
1/4 cup chopped, fresh parsley leaves
11/2 teaspoons Italian Seasoning
11/2 teaspoons The Lady's House Seasoning, recipe follows
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 bay leaves
1 1/2 pounds ground beef
6 to 9 Long strips lasagna noodles
12 ounces cottage cheese, mixed with 1 beaten egg and 1/2 cup Parmesan
1 cup Gruyere cheese, grated
1 cup Swiss cheese, grated
2 cups cheddar, grated
1 (8-ounce) package cream cheese
1 cup mozzarella, grated

Ricotta and Parmesan, 3 part Ricotta 1 part Parmesan, dump the cottage cheese replace with Ricotta

Omit the cottage cheese, gruyere cheese, swiss cheese, cheddar cheese & cream cheese. Go with mozzarella, parmesan and Ricotta and add a beaten egg to the Ricotta/cheese mixture. IMO, the recipe is pretty contrived. I would go with a 'classic' lasagna recipe.

For the Gruyere, Emmentaler. It is a softer cheese and it has a piquant, but not really sharp taste.
For the Swiss, Jarlsberg OR Appenzell. They both have a texture that is buttery and rich, and the flavor is mild and slightly sweet. It is an all-purpose cheese, good both for cooking and for eating as a snack.

You can substitute with Asiago cheese,Parmesan cheese,Mild Cheddar,Goat Cheese,Ricotta, Brie Cheese...You can basically substitute any kind cheese you like!

I usually use grated marble cheese. I always add cottage cheese. I have made it with Ricotta cheese and that always turns out well.

Just leave them out or there is Ricotta cheese Montery Jack.Hope this helps.

I agree, I would go with a good basic lasagna recipe, and add the veggies to it. That recipe seems like a lot of extra ingredients to no particular purpose.

I use Mozzarella and Ricotta cheese in mine. Makes it nice and rich.
