The best olive oil is cold pressed. This means that it is not heat treated and is more nutritional.
Cold pressed oils use extraction technique that protects the delicate structure of the oils. Most oils are heat extracted which can cause the oil to oxidise and go rancid quickly.

normal olive oil (the cheapest) is usually better for high heat cooking, such as grilling or saute. the more virgin (virgin, extra virgin, extra virgin cold press) the oil is the more actually olive solids are in it which at high temperatures will burn and smoke and give off flavors. at lower heats however (especially for making pasta sauces, the more virgin oils impart a more "olivey" flavor.

I ONLY use Berio Olive Oil for my salads...as it has a superior taste. I use cheaper brands for cooking. I don't care for the taste of extra virgin and I think the "light" varieties are rather bland.
