I'm with steve on this for the most part.

A good strong Stilton is hard to beat, and a really good Cheddar (Montgomery Cheddar is my favourite). There is an amazing soft rinded cheese called Epoisse, which is so ripe I have to buy it in a tub, otherwise it runs everywhere.

I think the English and French do by far the best cheeses in the world - the English for hard cheeses (and blue cheeses), and the French for soft cheese.

The Norwegian cheese mentioned above (Gjetost) is amazing - sort of fudge-like, and one bite is at first delicious, then revolting.

Im a big fan of smoked cheese myself, Edam in particular. But then, who can go wrong with good old cathedral city cheddar? There is also an interesting type called "wookie hole" cheese, which is actually matured in a vault in wookie hole (a big underground cave). The place itself is near western-supermare if ur interested.

Mmm !!
I absolutely adore Greek Halloumi cheese sliced up and grilled on a hot BBQ, it is the only cheese I know of that does not melt when it is heated.
