I have only two small heart shaped pans and want to make several cakes. If I mix the batter can I keep it in the fridge for up to 3 hours? Valentines cakes.

I wouldnt put it in the fridge, cakes rise better and more evenly when ingredients are at room temp. Just have several pieces of baking paper pre-cut for the pans, so you can easily & quickly remove and replace the the mixture.
The only problem you may have, is that the last few cakes may not rise as well as the first ones. This is due to air bubbles escaping from the mix as it sits around waiting. Be sure not to bang the mixing bowl on the bench each time your pour the mixture out.

Best to put into an oven immediately.
So it does not flatten.
I would not put it in frig. I'd keep baking one after the other. Let other remain outside.
