Ancho Chile
Flourless Chocolate Cake
6 oz Semisweet Chocolate, chopped
2 oz Unsweetened Chocolate, chopped
1 c Butter, diced
1/2 c Brown Sugar, packed
4 Eggs, beaten slightly
1 T Ancho Chile Powder
Preheat oven to 350 degrees.
Line bottom of 9 x 9 inch pan with parchment paper.
Place all chocolate in large bowl.
Melt butter, sugar, and chile powder in saucepan.
Stir to dissolve sugar.
Pour over chocolate, whisk till smooth.
Cool slightly and add eggs.
Pour batter into prepared pan.
Place pan in roasting pan.
Pour enough hot water in roasting pan to come half way up cake pan.
Bake about 1 hour until toothpick comes out with a few moist crumbs on it.
Chill.
Hold pan over low heat for 15 seconds to loosen.
Place plate over pan and invert.
Peel off paper.
Sprinkle with powdered sugar.

Well, you can really make your favorite chocolate cake recipe (I think it works best with a truffle cake) and simply add equal parts of ancho chili powder and ceylon cinnamon with one third part salt.
As for how much to add... I personally like a bit of heat, but i think it depends on the specifics of your recipe and your taste. I'd suggest that you taste the batter to see how much to add. Be sure to add the eggs after the spice or make sure to use fresh, high quality eggs (if not pasturized) to make sure you don't get sick.

No but I've tried it and it's quite nice. I also tried a choc cake recipe with mayonnaise in it and that was disgusting! Just some arbitrary info....
