A "stable" is usually used for the horses owned by a trainer or trainers. The horses taking part in a race is referred to as "The Field"

A group of racehorses that are out working on the gallops are referred to as "a string".

When racing they are usually referred to as "the field".

If they are in a field together at grass then they are a herd, just like any other group of horses.
