It's because our bodies have had 7-9 straight hours of fasting. Plus we usually eat our last meal about 3 hours before bedtime, so that ends up being almost 10 straight hours with no food.
A typical meal usually burns away in about 3 hours, and after that your body starts feeding off your stored body fat for energy. Remember, we use energy even while we're sleeping, albeit less than we do during the day.
Plus, the first thing you usually do in the morning is go pee, which can drop almost a half pound alone....

When you wake up you are running on empty. But even if you don't eat during the day you are still going to be drinking water or juice or soda or coffee to fill that void in your stomach so you will weight more at night.

Its water weight, everyone retains water. But you still should be eating during the day. Not eat will make you again weight, your metabolism will be very slow and you won't be burning calories because there's none to burn. You should be eating 6 small meals a day.

We still burn calories why we are sleeping however we donot consume calories at that time. We also loose water while sleeping and do not replace that until we drink something, so first thing in the morning you are probably somewhat dehydrated.
