Trying to get an understanding of the differences between these three similar drinks and range of quality in the the names. i.e. *** (3stars), VS, VSOP, XO, XXO etc. And what is the higherst rating

The answer is simple. All cognac and Armagnac is BRANDY.
Not all brandy is cognac.......

Cognac is produced only in the town of Cognac in France.

Armagnac is also produced in France, it is a lighter form of brandy.

Brandy is produced all over the world. We produce it here in Spain. It is as good as Cognac but as it was not produced in Cognac France it is only brandly.

Brandy (brandwien in Dutch) is 'burned wine'. Cognac and Armagnac are distilled from grapes. They are produced from specific grape varieties in the Cognac and Armagnac regions of France, respectively. The names are internationally registered so that only the drinks produced in those regions can be called so. The same goes for Champagne, which is produced from specific grape varieties in the Champagne region of France.
This however, does not mean that all brandies are inferior. Cyprus has very good brandies and I have tasted some of Portugal which was very good.

Brandy is distilled from grapes or other fruit. Think of it as wine that has been boiled so that the alcohol within turns to vapor and is caught, aged, and bottled. Cognac and Armagnac are specific types of Brandy.

Cognac comes from the Cognac region of France. It is made from white wine and must be aged in barrels made from oak taken from the forests of Limousin or Troncais.

Armagnac is distilled slightly differently (single distillation in continuous stills vs. Cognac's double distillation in copper stills). It too is made from white wine and is aged in black oak from Monzelun forest.

After downing a few Goblets of the above, believe me you can't read whats on the label.....3 stars become 6, xxo becomes a triple x movie.
What counts is....How BIG is the bottle.
