I'm not looking for the fishball recipe that you can find in any local supermarket. I am specifically looking for the street vendor fish ball recipe. From what I recall, it had a bread-like texture.

FISHBALL RECIPE:
Ingredients: 1 tbsp. baking powder
3 tbsp. cornstarch
1 tbsp. salt
1 kilo fish fillet (your choice of fish)


1. Wash fish fillet & drain in sieve or colander.
2. Chop fish fillet finely or put in chopper/blender. **optional***place ice if u want it to stick together
while mixing, but drain
3. mix with 1 tbsp. salt, add 1 tbsp baking powder & 3 tbsp constarch
4. mix well so it will roll nicely into balls.
5.take 1 tbsp fishball mixture & roll it into the plalm of your hands until you form a lovely nice ball.
repeat. you can make 100 fishballs with this mixture.
6. set fishballs aside. Boil water in a saucepan.
7. drop fishballs into the boiling water.
8. cooked fishballs float when they are done. collect the floaters to drain on sieve or colander.
9. set aside some for frying. store in fridge or freezer the others.
10. Deep fry & enjoy! they dont need to brown since they are already cooked. pierce fishballs in wooden/bamboo skewers if u like! Dip in sauce.

**SWEET dipping sauce for Fishball:
soysauce
water
sugar
grated fresh garlic
and flour to thicken
chili *optional
Basically you boil it on low heat until it thickens i dont have approx measurements but its like
making gravy or lumpia sauce. u just add more or less sugar to taste:

or try this:
4 tablespoons cornstarch
1/3 cup brown or white sugar
1/4 cup soy sauce
1-1/2 cups water
minced garlic
chili *optional

Combine cornstarch, sugar, soy sauce and water. Cook 5 minutes over low heat, stirring
constantly to prevent lumps. add chilies to spice it


***Sour Vinegar-based Sauce version***
Just combine all:
1/2 cup vinegar
soy sauce
onion chopped
garlic minced
chilies to taste
enjoy all!
