Instead of buying regular pancake mix...when you go to the store, buy swedish pancake mix.

Apple Pancakes
4 Servings

2/3 c flour -- unbleached
1 unsifted
2 t sugar
1/4 t salt
4 eggs -- large,beaten
1/2 c milk
2 c apple --,Slices
3/4 c butter (or margarine)
2 T sugar
1/4 t cinnamon

Sift together the flour, 2 t sugar, and the salt. Beat eggs and milk together. Gradually add flour mixture; beat until smooth.
Saute apples in 1/4 c of butter until tender. Mix 2 T sugar and the cinnamon together; toss with apples. Melt 2 T butter in a 6-inch
diameter, deep frypan. Pour in the batter to a depth of about 1/4-inch. When set, place 1/4 of the apples on top; cover with more batter. Fry pancake until lightly browned on both sides. Keep warm. Repeat the procedure 3 times, until all batter and apples are used.

Serve immediately.



Pancakes with Lemon
4 oz. plain flour
1 egg
pinch salt
0.5 pint milk
caster sugar
lemons

Sift the flour and salt into a bowl. Make a well in the middle and add the egg. Add half the milk, a little at a time, mixing with a wooden spoon, from the centre outwards, and gradually draw in the flour. Mix until smooth, and stir in the remainder of the milk.

Heat a little butter in an omelette or pancake pan. Pour in just enough mixture to cover the bottom of the pan. Cook until it is beginning to brown on the bottom (bubbles are appearing on the top). Loosen it by shaking the pan a little, then flip it or turn with a egg flipper. Cook briefly on the other side.
Place on a plate and dredge with caster sugar and lemon juice.
They can be kept warm, covered with a towel, in a warm oven.


Sweet Potato Pancakes

These pancakes are great served with honey and butter.

Serves 4
4 Eggs
1/2 tsp. Baking powder
1/4 cup Flour
1 cup Mashed sweet potatoes
1/4 cup Butter
1/4 cup Milk
1/4 tsp. Cinnamon
Oil
Mix all ingredients (except the oil) in a large bowl.
Preheat a large skillet or griddle. Add a little oil to the pan.

Drop a 1 1/2-oz. ladle full of batter on the hot pan. Cook about 3 minutes
per side, or until lightly browned.

Serve warm.


orange-cranberry pancakes
1 cup(s) buttermilk baking mix
1 large egg(s)
1/2 cup(s) fat-free milk
2 tsp sugar
1 tsp orange zest
1/8 tsp ground nutmeg
1 cup(s) cranberries, fresh, chopped
6 tbsp reduced-calorie pancake syrup



Instructions



Coat a large nonstick skillet with cooking spray. Combine baking mix,
egg, milk, sugar, zest and nutmeg in a medium bowl; mix well. Stir in
cranberries.


Warm skillet over medium-high heat. Pour batter onto skillet in 1/4
cup measures and cook for 1 1/2 minutes; flip and cook until lightly
browned, about 1 minute more. Set aside and keep warm; repeat with
remaining batter. Serve immediately. Yields 2 pancakes and 1 1/2
tablespoons of syrup per serving.

well i really dunno how to make sweet pancakes but i know how to make sweet POTATO pancakes.just follow the ingredients and procedures:
2 TB butter -- melted
1/2 cup cooked sweet potatoes
- peeled and chopped
- or roughly mashed
1 egg
1/3 cups all-purpose flour
1/2 tsp baking powder
1/4 cup milk (or more)
Sour cream

Place sweet potatoes a mixing bowl, add egg and mix well. Stir in the flour and add the baking powder. Add up to 1/3 cup of milk, stirring. Stir in 1 tablespoon butter. The mixture should have the consistency of thick, lumpy sauce and be able to coat a wooden spoon. Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 teaspoon butter. Spoon 3 tablespoons of batter per pancake into the skillet and cook until bubbles rise to the surface of the pancakes and break,
about 1 to 2 minutes. Using a spatula, flip the pancakes and cook another 2 minutes.
Repeat the procedure until all the pancakes are cooked. After the first batch is cooked, add as little butter as possible without allowing the pancakes to stick to the bottom of the pan. Makes 12 small pancakes.
