I bought a top round steak, and the label says "Marinating steak: marinate for 6-24 hrs in a tenderizing marinade, ie Italian salad dressing or salsa" but I don't want the taste of either in my steak. Does anyone know of some good and/or spicy alternatives?

You could use a tenderizer. The brand I remember is called Adolph's. It is based on papaya juice which has an enzyme that breaks down the protein in meat making it more tender. Aldoph's came in both seasoned and unseasoned styles

My favorite marinade for tough beef is red wine, salt, and garlic. Spread salt and either garlic powder or minced garlic all over the meat place it in a shallow baking dish and fill with cheap red wine at least half as deep as the steak is thick. Turn the steak several times. You can marinade it for an hour or overnight.

All that said the link below claims that any marinade that doesn't contain enzymes will not tenderize meat.

Sesame Beef
Serving Size : 4

Strips of round steak and chopped scallions are marinated with soy sauce and garlic, then quickly stir fried with sesame seeds. Add a little sesame oil to the marinade if you like that flavor. Serve with rice.

1 pound round steak
4 tablespoons soy sauce
4 tablespoons white sugar
4 tablespoons vegetable oil
2 cloves garlic, minced
2 green onions, chopped
2 tablespoons sesame seeds

Mix soy sauce, sugar, oil, garlic, and onions in a large bowl. Set aside. Cut steak into strips and add to bowl. Cover and refrigerate overnight, or at least 30 minutes. Cook in wok or frying pan until brown, about 5 minutes. Add sesame seeds and cook for additional 2 minutes.

Any citrus juice will do it. Pineapple juice is very effective. The enzymes in it are the same enzymes contained in Adolph's Meat Tenderizer. Whatever you use, it can be rinsed off prior to cooking but is usually not necessary as long as the meat is cooked on a grill and not in a frying pan. In most cases you won't taste the flavor of the marinade....that is, it will not taste like the stuff you marinated it in.

Melt some butter, mix tomato ketchup into that, add some thyme and just before taking it off the heat, add some wine and mix it in. Now cover the steak all around and let it sit for a minimum of 12, but better 24 hours. BBQ. I usually do that with T-bone steaks though.

Well you can put one together, the key ingredient should be an acid of sorts, vinegar, citric, ect... I have use coke a cola (not pepsi) because of the acid content. So start with a nice vinegar, salt pepper, chile powder, soy sauce, little sugar, what ever you like, just don't forget the acid.
