Desserts are always welcomed! If you don't have time to bake something, stop at a local bakery or even check out the supermarket... most have awesome bakeries these days.

I second the fruit salad suggestion, or you could also do a regular salad, a veggie tray or cheese and crackers. A 7-layer dip (or however many layers) is easy to make and you could buy chips... just layer refried beans or bean dip, sour cream, guacamole, shredded cheese, olives, chopped tomatoes, salsa, etc., or whatever else you'd like.

If you really want to impress, cut up some fruit, pound cake, get some marshmallows, pretzels, etc.... and make chocolate fondue. (http://www.lhj.com/home/Chocolate-Fondue-Recipes.html)

People also usually forget about beverages, so those are appreciated too...

Have fun!

1. Purchase some cans of B & B or Bush's beans, regular recipe. Cook up some bacon until crisp and break into small pieces, set aside. Heat the beans with some dijon mustard and maple syrup. Add the bacon. You've just made the canned beans your own recipe. You will have to use your own judgment on the amount of mustard and syrup. I like a lot of mustard and just enough syrup to slightly sweeten the beans, Most people prefer the opposite. 2. MIxed Green Salad with candied pecans or walnuts, dried cranberries and crumbled goat or feta cheese. Or use raisins, pignoli (pine) nuts and parmigiana cheese strips that you make with a potato peeler. Serve a good quality olive oil and balsamic vinegar on the side. If you live near Costco, they have a great packaged salad that has all the ingredients (dried cranberries, candied nuts, crumbled goat cheese and the dressing) in the bag of mixed salad. It is kept in their cold produce room. Just buy as many packages of the salad as you need, mix everything together except the cheese and salad dressing. Put the salad mix in a large bowl and empty the cheese packets and salad dressing into separate plastic containers and add them when you get to the Pot Luck. I used to bring this work for parties all the time and everyone thought I made it. Same with the beans.

How about a pasta salad, or a seven-layer bean dip with nacho chips? Or sushi,if you're feeling cosmopolitan? Mac and Cheese with a breadcrumb topping if you're feeling down-home-ish...also,
I'm not sure what it is called but all you do is cut up grapes, apples, and a few snickers bars. Then you mix a jar of marshmallow cream and some whip cream OR cream cheese (whatever you like best) and mix it with the fruit and snickers. It is so YUMMY!!!

I like to take a big fresh fruit salad. The women love it because they can eat as much as they want - the guys and kids usually really like it too.
I use lots of fresh fruit (I avoid bananas, apples and citrus) then add a can of lychee nuts (a canned chinese fruit, you can usually find these in the oriental food section of your market) along with the heavy syrup in the can. The lychees have a light, flowery fragrance and the syrup coats the fruit and keeps it from browning.

Cheaters lasagna!

Get a couple giant cans of ravioli. Rinse off that nasty sauce and add your own. Sprinkle shredded cheese between layers and on top and bake at 350 till all the cheese is melted and has good color. (Or you can microwave it) Serve with garlic bread.

It's simple, easy, and everyone likes it.

Easy! Brown some ground beef or turkey, add cream of mushroom soup and cooked egg noodles. Throw in some extra canned mushrooms if you have them and sprinkle dried parsley for color. It's too easy, kinda bland so everyone likes it, not particularly healthy, so some love it, and you'll be bringing home an empty dish.
