Most Japanese uses a combination of 4 writing systems
kanji, hiragana, katakana, and romaji
a combination of kanji can be used for words originally borrowed from Chinese centuries ago as well as to represent native Japanese words. A noun is often completely made up of kanji, verbs generally are made up of a single Chinese character plus hiragana that can change for conjigations (past tense and so on). However, all words can be written in hiragana and this is what all Japanese children do as they learn kanji. Many low level children books are written almost comletely in hiragana or in kanji with "furigana" (the pronunciation written in hiragana above the character. Many adverbs are written soley in hiragana, while foreign words are written in katakana unless they come from Chinese. Katakana is also often used in place of a specific kanji for species of animals.
Overall, the more formal the text, the more use of kanji

Children's books will be written mainly in kana (particularly hiragana).
For everything else, you will find that kanji, hiragana, and katakana are all used together. You need to know all three in order to read a Japanese book. There aren't any modern books for adults written only in kanji, only in hiragana, or only in katakana.

If you think about it, I suppose both. Both katakana and kanji make up a sentance. But if it's really old, I would have to guess kanji.
