I like the recipe on jiffy baking mix. I just dress mine up just a little. I follow the recipe and then I add two eggs except I whip the egg whites seperately. I also add 1/3 cup sugar and 2 teaspoons of vanilla. Fold in your eggs whites. This will make your hotcakes very light and fluffy. Serve with room temp butter and warmed hotcake syrup. Good Luck...

I got this one from Alton Brown, and I have never bought another prepared mix, as this is so good and easy. I make at least a double batch and keep it in the pantry so I can make pancakes any time I want.
Pancake mix
Dry mix
6 cups all-purpose flour
1 1/2 teaspoons baking soda
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar
Combine all ingredients in a lidded container. Shake to mix.
Use the mix within 3 months
INSTANT PANCAKES
2 eggs separated
2 cups buttermilk
4 tablespoons melted butter
2 cups dry pancake mix
butter for greasing pan
Whisk together the egg whites and the buttermilk in a small bowl. In another bowl whisk the egg yolks with the melted butter
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together. Pour the liquid ingredients on top of the dry mix. Using a whisk, mix the batter just enough to bring together. Don't try and get the lumps out.
Lightly butter a hot griddle or pan, and grill away.

you don't need any kind of pancake mix.
this makes about 3 pancakes for me
1/2 c. all-purpose flour
1 ts. baking powder
a little salt
milk to desired consistency (I never have measured it)
2 ts, sugar
a pat of melted butter
1 egg
The butter comes from the butter in the pan that I'm heating up, but cooled slightly so as to not cook the batter.
You can use this for waffles if you have a waffle maker, and yes it will taste different. I guess the pressure from the griddle irons does that.

Ingredients:
1 lg. Egg
1/2 c. Buckwheat flour
1/2 c. whole-wheat flour
3/4 c. milk (2 percent)
2 Tbl. Vegetable oil
1 Tbl. Honey
1/2 tsp. Salt
3 tsp. Baking powder
Honey Crunch Wheat Germ
Mix all ingredients except baking powder and wheat germ, just until batter is smooth. A wisk works great! Gently fold in baking powder with a spatula spoon batter onto griddle or Belgium waffler. Sprinkle honey crunch wheat germ lightly on top of each pancake or (waffler before closing waffle iron) cook until lightly browned around edges.
Waffles may be sprinkled with confectioners sugar and topped with whipped cream.
Makes 8 pancakes / 3 large waffles

I think the sweeter, the better:
1 cup of flour
1/2cup of buffalo's milk
3 eggs
1 1/2 tsp. of sugar
1 cup of olive oil
3 berries (blueberry, strawberry, blackberry) crushed and mixed
2 nuts ( chestnut and acorn) grinded
For the toppings and syrup
1 banana chopped into smaller pieces
4 berries (which you prefer)
1/4 cup of maple syrup
a hint of lemon zest (to balance the flavor and the smell)
1. Mix the flour and the milk,eggs, berries and nuts
2.Stir it for 5 minutes with no bubbles.
3. In the pan (make sure it's teflon) , put the olive oil in it. Make sure it's hot and enough for cooking
4. Put now the batter, like the omelette, fry it for 3 min. then filp it and fry again for 3 min.
5. Now if it is done, put the toppings in order:
Maple syrup
banana
Berries
lemon zest
Trust me, its good for your appetite and for your health. I hope the ingredients your using does not have Transfat.

Blueberry Pancake Mix:
25 min 10 min prep
10 pancakes
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup maple sugar or granulated sugar or light brown sugar
1/2 cup dried blueberries
2 tablespoons unsalted butter, plus
2 teaspoons unsalted butter
1 egg, beaten
1 1/4 cups milk
1. Combine flour, baking powder and salt in a medium bowl.
2. Pour into 1 pint wide mouth jar with tight fitting lid and pack down lightly. Layer maple sugar and dried blueberries attractively. Pack down lightly before adding each layer.
3. Seal jar.
4. Cover top of jar with fabric. Attach gift tag/recipe with raffia or ribbon. Attach large spatula if desired.
5. Add instructions - melt butter in large heavy bottomed skillet or griddle over medium heat.
6. Pour into medium bowl leaving thin film of butter on skillet.
7. Mix beaten egg and milk into butter in bowl; set aside.
8. Pour Blueberry Pancake into large bowl.
9. Stir well.
10. Add liquid mixture and stir to mix (Do not beat).
11. Pour 1/4 cup portions of batter into skillet.
12. Cook over medium heat 2-3 minutes on each side or until golden.
13. Dust with powdered sugar (optional).
