I never do anything by the book....I do it the easiest, most effective way possible. (raised four kids...two at home still =6)

First, remember to never over mix this...just get it all wet...lumps are ok....this is for a small family...I always doubled this and made other things with it to feed 8 people.

Get mixing bowl and wire whip.
Melt 1/3 cup butter or shortening
Place 2 cups all purpose flour and 5 teaspoons baking powder...in bowl now....mix and add 1 teaspoon salt and 1 tablespoon sugar...mix
Put all these ingredients in bowl at same time with flour mixture and mix as stated above.....(1-2 tsp. vanilla to taste is optional)
2 eggs....2 cups milk (or) buttermilk....and melted butter....if you want thinner pancakes that spread more in pan, just add 1/4 cup more milk

Lightly butter a pan/griddle......temperature is right at about medium heat....a drop of water will bounce around, before evaporating

My kids still beg me to make this more and they like to have friends over for breakfast on weekends.
The kids and I like it better with blueberry syrup (that's another easy recipe)

I like the recipe on jiffy baking mix. I just dress mine up just a little. I follow the recipe and then I add two eggs except I whip the egg whites seperately. I also add 1/3 cup sugar and 2 teaspoons of vanilla. Fold in your eggs whites. This will make your hotcakes very light and fluffy. Serve with room temp butter and warmed hotcake syrup. Good Luck...

You wanted the best you got the best. I ain't talking about the rock band KISS either! I saw them on tour in 1978 & it rocked. My ears rang for 3 days. Ok, here's the ingredients. 2 cups flour, 2 tablespoons sugar, 2 tablespoons baking powder, 1 teaspoon Mexican vanilla, 1 teaspoon salt, 1 & 1/2 cups milk, 2 eggs, & 2 tablespoons oil. Mix together all dry ingredients. Mix all liquid ingredients together. Add the dry ingredients to the wet ingredients & mix them together.

First off let me start by stating a fact, I don't drink alcohol. But it has it usages in the kitchen. Substituting beer for milk in pancakes makes them extremely light and fluffy

honestly, all mixes are good. what makes them stand out is to add vanilla to them. my family loves em.
